The US Army, US Navy, and US Marines have a book of recipes called the Quartermaster’s Cookbook. It’s a small compilation of 2k+ recipes of how to plan for 100 servings of any and everything.

Her epic meal preparation was known for over a decade. This included providing meals for everyone who joined the Gold Country AWANA program every Wednesday evening. This was a compilation of cooking gear, serving materials, and plates, and everything was ready in advance. Then there were the surprising meals that were so wonderful that a buffet restaurant would be jealous.

🌮 1️⃣ What to Provide — A Table of Many Hands

A Mexican buffet is not about one person cooking everything—it’s about everyone bringing something to the table. Assign simple categories so the load is shared: proteins (taco meat, chicken), sides (rice, beans), bases (tortillas, chips), toppings (cheese, lettuce, salsa), and extras (sour cream, jalapeños). Keep it familiar, flexible, and easy to transport. When each person brings one piece, the whole table becomes abundant.

🍚 2️⃣ How Much — Provision with Wisdom

For 100 people, think in generous but simple portions: about 25–30 pounds of cooked meat, 20–25 pounds of rice, 15–20 pounds of beans, and 150–200 tortillas (people will take more than one 😄). Add large trays of toppings so no one feels limited. It’s better to have a little extra than not enough—leftovers can bless someone later. Plan not for scarcity, but for overflow.

🥤 3️⃣ How to Serve — Simple, Orderly, Joyful

Set up a clear serving line: plates first, then proteins, then sides, then toppings. Use sturdy plates, large serving spoons, and easy-access items like squeeze bottles and open bowls. Provide bottled water for simplicity and dignity. Keep it moving, keep it clean, and keep it friendly—because how you serve matters as much as what you serve.
