The US Army, US Navy, and US Marines have a book of recipes called the Quartermaster’s Cookbook. It’s a small compilation of 2k+ recipes of how to plan for 100 servings of any and everything.
Her epic meal preparation was known for over a decade. This included providing meals for everyone who joined the Gold Country AWANA program every Wednesday evening. This was a compilation of cooking gear, serving materials, and plates, and everything was ready in advance. Then there were the surprising meals that were so wonderful that a buffet restaurant would be jealous.
In this lifestyle of giving, you know what brings your heart comfort and cheer and enchiladas are top of that list. The beauty of a soft corn tortilla filled with seasoned ground beef, rolled and then baptized with red sauce. This can only be topped with cheese, a spot of sour cream and an olive. Place a couple on uno plato, one plate, with refried beans and you have a gift of kindness that you and your tummy know best.
To make these rolled gold enchiladas would take a team, and loads of time – not so mi amigo!
Yes, my sis-in-law Peggy still makes the bestest homemade tacos run through hot oil, filled to the top with kindness and parmesan cheese sprinkled on top; but this is an enchilada and we have a couple hours to complete this 100+ meal.

FROZEN TAQUITOS!
Si’ buy a couple of boxes of frozen taquitos, bags of cheese and cans of red enchilada sauce. Don’t forget the olives and the sour cream. Place the taquitos in the pan and load up the goodness. 2 ROWS TALL! Follow the heating directions above and check your temperatures. Serve with delight that the Lord has given you another way to quickly give on this Las Posadas week. Que Dios te bendiga!
