The US Army, US Navy, and US Marines have a book of recipes called the Quartermaster’s Cookbook. It’s a small compilation of 2k+ recipes of how to plan for 100 servings of any and everything.
Her epic meal preparation was known for over a decade. This included providing meals for everyone who joined the Gold Country AWANA program every Wednesday evening. This was a compilation of cooking gear, serving materials, and plates, and everything was ready in advance. Then there were the surprising meals that were so wonderful that a buffet restaurant would be jealous.



🍖BRAISED ROAST BEEF BLESSING for all🥖
🥖 1️⃣ The Provision — Simple, Rich, Ready
A French Dip sandwich brings comfort in its purest form: tender roast beef, a sturdy roll, and that beautiful au jus waiting to receive the dip. It’s not complicated, and that’s the beauty—simple ingredients done well feed many with ease. Prepare the meat ahead if needed, keep it warm and juicy, and have plenty of rolls ready. This is food that meets people right where they are—hungry and ready.

🍖 2️⃣ The Portions — Plan for Full Satisfaction
For 100 people, aim for about 30–35 pounds of cooked roast beef, sliced or shredded, and 100–120 sturdy rolls (some will go back for seconds 😄). Prepare a large batch of au jus—about 3–4 gallons—so every sandwich can take a proper dip. Keep portions generous but manageable, because this meal is meant to satisfy, not tease. When people dip that sandwich, they should feel like they’ve been served well.

🥣 3️⃣ The Serving — Dip with Dignity
Set up a smooth line: sandwich first, then a small cup or bowl of au jus for dipping. Use sturdy paper boats or plates and one thick napkin (or two 😄)—because this is a deliciously messy blessing. Keep the flow moving, keep the juice hot, and keep the smiles warm. This is hands-on, interactive food—people don’t just eat it, they experience it.
