ONE SKILLET MEALS
I am a big fan of my one meal that is custom made for just little ole me. I went to Marie Calendar Pies in Citrus Heights on a Saturday morning and they had the brunch chef cooking 1 sauce pan omelet. The chef had a set of butane burner stoves, in a row. With precision and delight, each omelet or egg was made exact as you would like. That inspired our adventures in Seattle.

I Learned HOW to Fry an Egg

This seems easy; but with the cost of eggs, per egg, we are very picky about “over easy.”
#1 and Most Important – CLEAN and SMOOTH Pan. I was a dishwasher in Carmichael, back in the day. I learned that an aluminum sauce pan and #0000 steel wool were best friends. Teflon is my choice today on the sidewalk meals.
#2 Dab of Butter. This is a flavor must. The butter melts on medium and the egg is ready to place.
#3 Use TWO hands to break an egg. This one egg is so eggspensive that I won’t get fancy, besides, it doesn’t work.  
#4 Dash of Salt. It preserves and maintains flavor
#5 Sauce Pan Lid. Your butane will only heat so much, so use the Dutch oven idea.
LAST… A DASH OF WATER! Serious… use a dash of water and you will always have clean white eggs each and every time. No flipping, no spatula needed. It is 100% clean, white and ready. Cook longer if you must; but that dash of water is the best idea that I ever learned.

You Have  A Carton of EGGS & You Memorized the Bible Verses from Sunday.

This is your opportunity to eggsperiment, cook, and have a Bible study (from memory) with your neighbor street kids. This is your opportunity to reach them at their home level of the sidewalk. You will show how much you care about their eternal and physical needs when you reach “the least of them.”
